Rugelach

Rugelach are tender, flaky little crescents rolled around fruit, nuts, and cinnamon. The cream-cheese dough is what makes them melt in your mouth. They keep beautifully and make a perfect gift.

  1. 1Beat the cream cheese and butter until smooth, then mix in the flour and salt to form a soft dough.
  2. 2Divide into four disks, wrap, and chill at least 2 hours.
  3. 3Roll each disk into a 9-inch circle on a floured surface.
  4. 4Spread with a thin layer of jam, sprinkle with the cinnamon sugar and walnuts.
  5. 5Cut each circle into 8 wedges and roll each up from the wide end to the point.
  6. 6Place point-down on parchment, brush with egg, and sprinkle with more cinnamon sugar.
  7. 7Bake at 350°F for 20 to 25 minutes until golden. Cool on a rack.
Bubbe's Tip

Keep the dough cold; if it softens while you work, chill the shaped cookies before baking so they hold their shape.
